Cinnamon Streusel Coffee Cake

Hey there and welcome back! I know I post a lot of recipes, but I love to bake and cook. I am really trying to do more crafty things, but until I have something to share I have another recipe for you guys. It's (another) recipe from Anna Olson, and it's pretty fantastic.




This coffee cake was really easy to make and I was able to use up leftover sour cream before I had to throw it away. I love it when I can use food and not throw it away.

Cinnamon Streusel Coffee Cake (Anna Olson, Back to Baking pg.216)              

Topping:
1/2 cup all purpose flour                               1/2 cup packed brown sugar
1/2 tsp ground cinnamon                              1/4 cup unsalted butter, melted
Pinch of salt

Cake:
1/2 cup unsalted butter, room temperature     3/4 cup sugar
1 egg                                                           1 egg yolk
1/2 cup sour cream                                       1 tsp vanilla extract
1 1/3 cup all purpose flour                             1 tsp baking powder
1/4 tsp baking soda                                      1/4 tsp salt

1. Preheat oven to 350°. Grease an 8-inch square pan and line the bottom and sides with parchment paper. I used an 8-inch aluminum square pan and did not use parchment paper, but did grease all side of the pan.

2. For the streusel topping, stir the flour, brown sugar, cinnamon and salt in a medium bowl with a fork to combine. Add the melted butter and stir until the mixture is evenly moistened.

3. For the cake, beat the butter and sugar until its light and fluffy. Add the whole egg and then the egg yolk, beating well after each addition. Stir in the sour cream and vanilla. In a separate bowl, sift the flour, baking powerd, baking soda and salt. Add the flour mixture to the butter mixture and stir until just blended.

4. Spread the batter into the prepared pan and sprinkle with streusel topping. Bake for 35 minutes or until a tester comes out clean. It took my cake 45 minutes until the tester was clean, so you may need to adjust your bake time depending on the pan that you use. Allow the cake to cool completely in the pan.



Next time I make this I will probably cut the streusel topping in half as we found there to be way too much of it. It was a very messy coffee cake. Delicious, but very messy. This will have an encore presentation of this bad boy in the near future.
